This Gelée is made exclusively by hand and using only the best of Nero d'Avola wine. The Nero d'Avola is brought to the boil very quickly in order to concentrate and bring out the best of its heady perfumes and aromas, which are transferred entirely into the jelly. The wine jelly, which is not an alcoholic product as this evaporates completely during boiling, retains a flavour that is incredibly faithful to the wine of origin.
