The Blu di Bufala is a blue buffalo milk cheese, with a peculiar parallelepiped shape. It was conceived and produced in the Quattro Portoni dairy in 2006 and today represents the icon of the company of Cologno al Serio. It is created with only pasteurized whole buffalo milk, derived from the farm herd counting 950 buffaloes of Mediterranean Italian breed. The Blu di Bufala has a dry and striped natural rind of amber-gray color. The paste, pleasantly creamy but firm, is light cream in color, has blue widespread veins and some irregular cavities. The humidity of the paste varies according to the seasoning. The aroma is intense, of mature milk and moulds. As the aging period increases, it evolves into scents of undergrowth and fungus. The taste is distinct, intense and persistent, sweetened by the fat of buffalo milk: a creamy milk, sweet and particularly lush. With the lengthening of the aging the scent becomes richer, complex and round, but not aggressive. The minimum ripening period is 90 days, but in our opinion it reaches its maximum expression of pleasantness approaching the 6 months of maturation.
