Cous cous is an ancient multi-ethnic dish, complete and delicious that with its centuries of history behind it, has now become one of the most popular dishes in the world together with pasta and rice. Born as a local dish in North African countries, it then spread to Sicily and over time has become a cosmopolitan dish. There are endless versions and recipes of couscous: starting with the more traditional ones given by the combination with fish, meat, legumes or vegetables, up to the sweet ones with milk, dates or dried fruit, honey and cinnamon.
