The Chef's Corner – Episode 5: Red Rice with Truffled Mashed Chickpeas.

Along this journey, Chef Vincenzo Squarciafico (www.vincenzochef.com) will give you innovative ideas for simple yet delicious recipes using almost entirely buononaturale's specialty food products. Our journey continues at the CIBUS 2021 trade show, in Parma, Italy, with a simple salad recipe. By mixing a few healthy ingredients you will obtain a creamy chickpea blend to garnish any crunchy base, for example a healthy red rice salad. INGREDIENTS for 2 people: • buononaturale ORGANIC Boiled chickpeas 300g; • buononaturale Pistachio pesto 90g; • buononaturale Black truffle carpaccio 200g; • 30g shallot, 60g carrots, 30g parsley, and 80g extra-virgin olive oil. PROCEDURE: 1. Dry toast (without oil or butter) the buononaturale ORGANIC Red rice for about 8 minutes on high flame, stirring continuously; 2. Add a teaspoon of sea salt and mix again for one minute; 3. Add your hot broth all together until your Red Rice Pilaf is ready; 4. Prepare another pot and add extra-virgin olive oil to it; 5. Julienne and sauté a shallot and a carrot over low heat; 6. Add the buononaturale ORGANIC Chickpeas and their canned water to it until the shallot and carrot are fully covered; 7. Add two ladles of broth and mix everything together; 8. Pour extra-virgin olive oil into a container; 9. Slice and add some parsley to the container, setting it aside to decorate at the end; 10. Add rosemary to your chickpea mix; 11. Stir, mixing everything together, and add salt to taste; 12. Blend the chickpea mix until creamy; 13. Add the buononaturale Pistachio pesto to your Red rice Pilaf in a separate bowl and mix everything together; 14. Plate up the rice Pilaf and add some chickpea cream on top of it; 15. Top it with a couple of slices of the buononaturale Black truffle carpaccio; 16. Now, do not forget to sprinkle your parsley-flavored extra-virgin olive oil on your dish; 17.
