THE COOPERATIVE - THE PRODUCER
The PRO.BIO Organisation of Producers of the olive sector was born from the association of Calabrian olive
producers of the province of Cosenza in the municipalities of Terranova da Sibari, Cassano allo Ionio,
Spezzano Albanese, Tarsia, San Lorenzo del Vallo, San Demetrio Corone and Corigliano-Rossano. The
territory, mainly hilly, extends between the Crati river and the furthest reaches of Mount Pollino. The main
varieties are native cultivars: Tondina and Carolea.

TONDINA - THE CULTIVAR
A cultivar native to the province of Cosenza. Tondina oils are characterised by an average level of fruitiness,
a medium-light level of bitterness and spiciness, with a prevalent hint of fresh almond and light notes of
grass/leaf and artichoke.

GASTRONOMIC PAIRINGS
The characteristics perceivable on consumption make Tondina oil suitable for pairing with fish, white
meats, mixed vegetable salads and sweet cheeses.
