THE COOPERATIVE - THE PRODUCER
The PRO.BIO Organisation of Producers of the olive sector was born from the association of Calabrian olive
producers of the province of Cosenza in the municipalities of Terranova da Sibari, Cassano allo Ionio,
Spezzano Albanese, Tarsia, San Lorenzo del Vallo, San Demetrio Corone and Corigliano-Rossano. The
territory, mainly hilly, extends between the Crati river and the furthest reaches of Mount Pollino. The main
varieties are native cultivars: Tondina and Carolea.

CAROLEA - THE CULTIVAR
A cultivar native to Calabria, it is cultivated up to an altitude of 800 m a.s.l. Carolea oils are characterised by
a medium/intense level of fruitiness, a medium level of bitterness and spiciness, with prevailing herbaceous
notes and light hints of artichoke, fresh almond and tomato.

GASTRONOMIC PAIRINGS
Its sensory characteristics suggest its use in fish appetisers, vegetable soups, grilled fish, meat carpaccio
and boiled or grilled vegetables.
