THE COOPERATIVE - THE PRODUCER
Promoted by the ACLI of Avellino, the A.P.O.O.A.T. SOC COOP. was founded in 1979 as an association of
olive oil producers with the aim of protecting the sector and providing assistance to members for access to
Community production aid. Over the years, the Cooperative has distinguished itself by carrying out
initiatives aimed at improving the quality of production and has also started a production and marketing
activity of extra-virgin olive oil with the aim of aggregating the micro-productions of the members in a
single offer of greater commercial value. The experience gained in the characteristics of the traditional olive
cultivation of the territory, together with the conviction of the importance of performing production
characterised by a close link with the territory, have led the cooperative to produce monovarietal oils
obtained from the pure milling of the native cultivars of the Irpino and Benevento cultivation area.

LA RAVECE - THE CULTIVAR
It is a cultivar native to the province of Avellino, of unknown origin, but present in Irpinia since the
sixteenth century. It is much appreciated for the organoleptic quality of its oil, so much so that it has
become a symbol of the quality olive growing of the territory. Ravece oils are characterised by a medium-
intense level of fruitiness, a medium level of bitterness and spiciness, with prevalent hints of grass/leaf and
tomato and light notes of artichoke and fresh almond.

GASTRONOMIC PAIRINGS
Its particular sensory characteristics make Ravece oil valuable in enhancing rustic dishes, legume soups,
roasts of red meat; the vegetal notes suggest a valuable use even in pastry on cold desserts.
