THE COOPERATIVE - THE PRODUCER

L’OLIOLIVA OP Soc. Coop. a.r.l. is an organisation of Sicilian olive producers, which today brings together
more than 2,000 farms. L’OLIOLIVA OP produces and selects PGI SICILY and 100% ITALIAN extra-virgin olive
oil from its members. It carries out its activity on the basis of specific agreements with Agea and the Sicily
Region, as required by national and Community regulations. The main purpose of OLIOLIVA OP has always
been to support, promote and enhance olive growing, to raise quality standards, to encourage the
introduction of innovative techniques in the olive plants of its members and in the entire production cycle.

BIANCOLILLA - THE CULTIVAR
Biancolilla is one of the oldest and most widespread cultivars in western Sicily. The variety owes its name to
the fact that during the ripening phase the drupes change from the typical light green colour of the unripe
fruit to a shade of red tending towards a purplish colour. Biancolilla oils are characterised by a
medium/intense level of fruitiness, a medium level of bitterness and spiciness, with prevailing herbaceous
notes and light hints of artichoke, fresh almond and tomato.

GASTRONOMIC PAIRINGS
Its particular sensory characteristics make Biancolilla oil suitable in combination with grilled fish, raw and
cooked vegetables, white meats and all dishes with a delicate taste.
