THE COOPERATIVE - THE PRODUCER

THE A.P.OL. PRODUCERS' ASSOCIATION based in Bari was founded in 1997 with the POM project aimed at
creating services for the commercial enhancement of southern agricultural productions, with the aim of
promoting and disseminating self-monitoring regulations of olive farms in order to enhance a product such
as extra-virgin olive oil which, in regions such as Puglia, is also synonymous with culture, traditions,
landscape, tourism and social enrichment. Currently it has about 2,200 members operating in the territory,
which is the "cradle of Italian olive cultivation", the one that expands around the slopes of the historic
Federiciano manor "Castel del Monte" to cover the territories caressed by the National Park of Alta Murgia
on the one hand and the sunny Adriatic coasts that, starting from the salt pans of Margherita di Savoia,
stretch to capture the crystalline waters of the city of Monopoli. A territory strongly characterised by the
northern slope, by the undisputed presence of his majesty the cultivar "Coratina", and on the southern
slope by the presence of the "Ogliarola Barese or Cima di Bitonto".

LA CORATINA - THE CULTIVAR
A cultivar native to the city of Corato, widespread and cultivated throughout the countryside of Northern
Barese. Coratina oils are characterised by a medium/intense level of fruity, bitter and spicy flavours, with a
prevalent hint of fresh almond and light tastes of grass/leaf and artichoke.

GASTRONOMIC PAIRINGS
Its organoleptic characteristics suggest pairing it with regular soups and legume soups, game, grilled meat,
roasts, mature cheeses and grilled vegetables.
