Bronze-drawn caserecce are obtained from the mixing, drawing and drying of durum wheat semolina and water. Bronze dies have a special structure, the pasta does not come out smooth like ordinary pasta but wrinkled. This helps the pasta to retain the sauces, which then flavour it better.
