Onion confit is characterised by an unmistakable sweet-and-sour taste, which remains delicate and appealing. It is prepared by cooking onions at a low temperature in oil, water and a little sugar. In this way, all the notes and aftertaste of the onion are finely enhanced, giving it a full, slightly sour taste.
