The best wheels of Blu di bufala, the blue cheese with an original parallelepiped shape, are aged in raisin moscato marcs, which remain on the wrinkled amber-pink rind, and which give a delicate and characteristic vinous scent. The paste is creamy, or crumbly in the longer seasoned forms, straw yellow in color with blue veins. When tasted, the aroma is pleasantly intense, the flavor unique, full and persistent, rarely spicy.
