This is the Iberico product par excellence, obtained from the legs of 100% Iberico pigs fed exclusively on acorns and natural pastures on our property.
It belongs to the group of high quality food products.
All stages of production require special care, but it is in the cellars where, with the passage of time, it attains its unique aroma and flavour. The salting process is very light and results in a delicate and balanced flavour. The curing of this product takes place in a natural drying room where the pure air of the Sierra de Béjar and the Sierra de Salamanca flows and the curing time is at least 48 months.
