Slow Food Presidium

Round but flattened, of an intense color that can be red or green, ribbed, the Neapolitan Papaccelle, also called Paprecchie have a pulp with a full and crunchy consistency. Although small, sautéed, they are the ideal side dishes for sausages, pork ribs and cod. Peppers with a rustic flavor are ideal for preserving both in oil and in vinegar.
