Raisin Bread Bites

If you like nuts, you can enrich the bread bites with coarsely chopped almonds or hazelnuts. Children should be prompted to appreciate the value of dried fruit like raisins. They contain valuable nutrients, essential for a healthy digestive system, and provide children with the energy they need for school. Choose Greek raisins as they are of high quality. This is my mother’s recipe for raisin bread bites. SERVES: 15 BITES - MADE IN: 3-4 H – DIFFICULTY: EASY 15gr fresh yeast 4 eggs 700gr flour 1teaspoon salt 80gr Black Currants 170ml Hellenic Grocery “EXTRA VIRGIN OLIVE OIL” 5 tablespoons sugar 120ml milk 1 teaspoon anise, powdered with a mortar and pestle 1 orange, unwaxed, zest Preparation 1. Dilute the fresh yeast with lukewarm water and some flour. Cover and let rise. 2. Beat the eggs in a bowl. Place the flour, salt and raisins into a large bowl. Make a small well in the centre and pour in the diluted yeast, olive oil, eggs, sugar, milk, anise and orange zest. Give the wet ingredients a whisk with your fingers and gradually blend the flour into them. Knead well until smooth dough is formed. Cover and let rise in room temperature for a few hours until doubled in size. 3. Cut the dough into small lemon-sized pieces, roll out into balls and place them in a baking sheet lined with parchment paper. Let rise for about 45 minutes. 4. Bake in the oven at 150°C/302°F for 35-45 minutes.
