A chef’s innermost ambition is to tickle the palate without leaving the possibility to think, analyse, without even trying to describe what we are eating: it does not pass through the mind, but gets straight to the heart. That’s how I prepared Hearts with parmesan cheese. A melting heart of Parmigiano Reggiano, wrapped in a crispy breadcrumb; an explosive mix of umami, pure emotion.
