The most profound of ambitions, for a chef, is to delight the palate without the possibility of reasoning, analyzing, or even trying to describe what one is eating: without passing through the mind, straight to the heart. So I prepared Hearts with Parmigiano Reggiano, a liquid heart of Parmigiano Reggiano wrapped in a crunchy breading: an explosive blend of umami, pure emotion.
