The loin is obtained from the processing of fresh swine  neck of Nero D'Abruzzo, carefully chosen. The work is handmade, the neck is salted, spicy, massaged and tied by hand. The characteristic cuts are the veins of fat that accompany the lean parts of an intense red color. A delight for our palate.
