The Chef's Corner – Episode 7: Tapas-Style Vegetarian Carpaccio.

Our journey continues at the CIBUS 2021 trade show, in Parma, Italy, with another quick and easy recipe. We combine a few healthy ingredients to obtain a memorable appetizer or finger food for your get-togethers with friends and family. Additionally, this dish is meant to be vegetarian. INGREDIENTS for 4 people: • buononaturale ORGANIC Artichokes in olive oil 120g; • buononaturale ORGANIC Dried tomatoes in oil 170g; • buononaturale Truffle carpaccio 80g; • 200g cucumbers, rice waffles, 100g fresh champignon mushrooms, 200g mascarpone cheese. PROCEDURE: 1. Set out your rice waffles (or crackers) as a base for the carpaccio; 2. Slice a cucumber thinly and arrange each carpaccio slice on a rice waffle; 3. Dice the other ingredients into cubes, starting from the mushrooms; 4. Add flakes of the mascarpone cheese on top of your carpaccio base; 5. Decorate each waffle with an artichoke, a tomato, and finally a truffle carpaccio slice; 6.
