One of the most savoured samis, this cold cut with sweet garlic is produced with only lean pork meat, flavoured with garlic from Vessalico (the Slow Food Presidium) that is peeled and turned into a paste, with the addition of wine from the Ligurian Riviera of Ponente. The garlic is not directly added into the salami mixture, rather a garlic and red PDO winw blend is filtered so that only the aromas prevail.
